Carrot Ribbons

Looking for a new way to enjoy carrots? Turn them into a refreshing carrot ribbon salad that's packed with flavour and easy to make!

Ingredients

Salad

  • 5-6 medium carrots, peeled into ribbons

  • Ice water for soaking

Quick Dressing

  • 3 tablespoons extra-virgin olive oil

  • 2 tablespoons fresh lemon juice (or apple cider vinegar)

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon Dijon mustard

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Instructions

Step 1: Create the Carrot Ribbons

Peel the outer skin from the carrots. Continue peeling lengthwise, turning the carrot as needed, until you have long, thin ribbons.

Step 2: Crisp the Carrots

Place the carrot ribbons in a bowl of ice water and refrigerate for at least 4 hours or overnight. Drain well before serving.

Step 3: Make the Dressing

In a small bowl or jar, whisk together the olive oil, lemon juice (or vinegar), honey or maple syrup, Dijon mustard, salt, and pepper until well combined.

Step 4: Toss and Serve

Drizzle the dressing over the carrot ribbons and toss gently to coat. Serve immediately.

Tips for Success

  • Chill the carrot ribbons overnight for the best crisp texture.

  • Add chopped parsley, cilantro, or mint for extra freshness.

  • Top with sunflower seeds, pumpkin seeds, or chopped nuts for added crunch.

  • Add raisins, dried cranberries, or apple slices for a sweeter salad.

  • Prepare the dressing ahead of time and store in the refrigerator for up to one week.
