Lemon Carrot Cauliflower Soup
A bright, creamy soup made with simple vegetables and fresh lemon for a comforting, budget-friendly meal.
Ingredients
2 tablespoons olive oil, plus more for serving
1 large white onion, peeled and diced (about 2 cups)
2 large garlic cloves, minced
1 teaspoon ground coriander
1 teaspoon ground ginger
5 medium carrots (about 1 lb), peeled and cut into 1-inch pieces
1-2 teaspoons salt, to taste
3 tablespoons white miso or 2 tablespoons nutritional yeast flakes (optional)
1 small head cauliflower (or half a large head), cut into florets
6 cups water
1 teaspoon lemon zest
2 tablespoons lemon juice, more to taste
Optional Garnishes
Smoky chili powder
Fresh cilantro leaves
Extra drizzle of olive oil
Instructions
Step 1: Cook the Aromatics
Heat olive oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until soft and lightly golden, about 7-10 minutes. Add the garlic and cook for another minute.
Step 2: Simmer the Vegetables
Add the carrots, coriander, salt, and water. Stir in the miso or nutritional yeast until dissolved. Bring to a simmer and cook uncovered for 5 minutes.
Add the cauliflower, cover, and continue cooking over medium-low heat until the vegetables are very tender, about 10 minutes.
Step 3: Blend the Soup
Remove from the heat and blend until smooth using an immersion blender. Alternatively, allow the soup to cool slightly and blend in batches using a blender or food processor.
Step 4: Finish and Serve
Return the soup to the heat if needed. Stir in the lemon zest and lemon juice just before serving.
Serve warm with a drizzle of olive oil, a sprinkle of smoky chili powder, and fresh cilantro if desired.

Adjust the lemon juice to suit your taste preference.
Add celery or sweet potato for extra flavour and nutrition.
Freeze leftovers in individual portions for a quick future meal.
If you don't have cauliflower, broccoli works well too.
